Masala Chai, with all its goodness, works wonders not only on your palette but also on your psyche. It’s healthy, tasty & refreshing.

Take one medium-sized cinnamon stick, four cloves, two green cardamom pods, four peppercorns and a bit of nutmeg. Dry roast them on a medium flame for two minutes. Switch off the stove and let them cool down. Pound the spices in pestle and mortar; it turns into a coarse mixture – don’t make it into a powder. In North India, this spice mixture is called Karha.
